A few years ago, I learned just how important it is to have vegetarian options ready during the holidays. I was hosting Christmas dinner when I received a last-minute message from two friends who had just moved to Crete. They were originally traveling and hadn’t planned to join us, but their trip ended earlier than expected.

With no family nearby and nowhere special to spend the holidays, they suddenly found themselves free on Christmas — and I knew immediately they had to be at our table.

They’re vegetarians, and while they do include eggs in their diet, my menu that year was very much centered around traditional dishes that include meat. With dinner already in progress, I pulled together a handful of vegetarian appetizers in what felt like minutes. Nothing complicated, nothing fancy — just honest, comforting food made with intention.
